Go Back In Time For Dinner & Tournament at Medieval Times #

I have heard good things about Medieval Times Dinner & Tournament for years and yet we have never been there. I think it is about time to change that. We are planning a trip there in the next few weeks. We will be going to the one in Lyndhurst, NJ.

The kids were really excited when we told them about it. We will be sharing all the fun with our readers through live posting while we are there and a full rundown on everything that happened when we get back.

I have been studying up on what happens during the performance to get myself ready for the action. Did you know the Knights perform with real metal weapons and wear authentic armor? They do, and during battle scenes, real titanium swords create sparks. I also learned that Medieval Times is the #1 breeder of pure Spanish horses in North America.

When jousting, the Knights charge at speeds of approximately 15 to 20 miles per hour and reach an impact velocity speed of about 30 to 40 miles per hour. This must all make people crave soup because 125,000 gallons of soup are served each year!

I recently had the chance to try out a few pieces of Creo collapsible food storage containers and I absolutely love them. They collapse so they save room in cabinets and drawers and expand to hold your food and keep it fresh with the vacuum seals. Check Out Annie’s New Family Size Frozen Entrees!!! #InfluensterVox, #AnniesHomegrown

I recently had the chance to try Annie’s Homegrown frozen entrees.  I went to my Super Target and headed off to the frozen section where I found it well stocked with all the different varieties of frozen Annie’s family size entrees.  I chose the lasagna with meat sauce.  Made with organic pasta and tomatoes layered with pasta, tomato sauce, seasoned beef and a blend of four cheeses.

You can make it in the conventional oven or in the microwave and I chose the microwave because it was faster and we were running behind.  You cook for 9 minutes on full power, 9 minutes on 50% power and let stand in the microwave for 3 minutes.  Then you can get it out and enjoy.  I really liked it and so did the family.  Not too spicy or anything but a really nice warm comfort food dish.  Cannot wait to try some of the other kinds.  Hope you give it a try and let me know how you like it.

With our large family and my older kid’s friends always over, it’s like a party every day at our house.  I sometimes feel like we have a revolving door and you never know who’s going to pop over.  With older boys and their friends, I can tell you that we always have hungry people in our house.

My husband can be found making his signature chili and serving it with cubes of cheddar cheese for an unbelievable hearty bowl of comfort food.  Chips and dips of all kinds, cold drinks, and we always like to have some finger foods like wings too.  T.G.I. I picked some up recently from the well-stocked freezer section at Walmart.  There are regular and even value sizes of some varieties to choose from, and  you better believe  when the value size was available, I chose that and loaded up my cart.  I checked out and drove home and my husband put the treats in our extra freezer.

Imagine my surprise the next day when I went to get the boxes and found considerably less then I purchased.  Apparently, my older boys found the stash while getting some ice cream.  Enticed seeing the colorful T.G.I Friday’s packaging and even more intrigued by the pictures of their favorite Friday’s foods, those snacks never had a chance.  Needless to say, there was quite a dent put in my stash.  Oh well, what are you going to do, the story of living with teenagers!  I never need to worry about my little ones doing that yet, give them time though.

So I took what I had left and prepared a sampling buffet for us to try so we could get a feel for our favorites.  I cooked what was left of the wings, boneless chicken, loaded potato skins and poppers.  I left some of the chicken uncoated for my little guys but they ended up wanting the sauce.  I think it’s nice though that you can keep some plain for those who prefer that.  Everything cooked very quickly and disappeared just as fast which is a testimony to how good it tasted!

Christmas Day!

Well, Christmas Day was a blast.  The little ones were definitely all aglow when they saw what Santa left under the tree.  We, left out some homemade cookies and milk in front of the fireplace for Santa.  The big kids got some nice gifts as well, most of which they opened on Christmas Eve (no fair).  Alexandra got a huge bottle of Chanel Chance, Yankee Candles, Footie PJs, Charlie Brown Christmas hardcover special edition book, and a lot of clothes, plus she is getting new tires for her Rav 4.  Ray got new tires for his car (boy were they hard to wrap), lots of clothes, leather gloves, and other stuff.  Michael got a ton of clothes, hats, gloves, DJ Hero set with the turntable for PS3, some video games for the whole family for the wii, the dance ones that are great for exercise.  Ethan loved the workbench with real working tool sounds and effects, they both loved their Bruder trucks, Zhu Zhu pets were another hit with the kids and dogs alike.  Believe it or not the little ones got so wrapped up in the presents they opened we still have wrapped presents under the tree which they open everyday.  The other big hit was their acoustic guitars and Singamajigs.  Ethan got the Tag Junior reader and books and he really likes that.  Santa brought Mommy a new speedlight for her camera, an extra camera battery, and this neat camera lens travel mug that looks just like a camera lens, bracelet and necklace.  Daddy got a Dallas Cowboys throw, Superman PJs (lol), the new Jimi Hendrix box set (West Coast Seattle Boy), new sweat pants, a mousepad of a favorite picture of him and the little guys, and things I cannot even remember.   Santa also stuffed all of our stockings with goodies as well.  Later in the evening we had a great dinner with a delicious beef roast with organic carrots and fingerling potatoes, a roasted turkey breast, and lots of sweet goodies for dessert.  Later in the evening our cousins stopped by to visit with their two kids.   It was a very long but very blessed day to spend with family and enjoy the greatest gifts of all, each other and love.

Loving the Vitamix!!!

What can I say?  I think it has been a week and I am loving drinking raw green smoothies at least once a day.  I am thrilled that I am eating things like Kale, which I have never eaten before.  I cannot believe the health benefits in Kale, and it is all in its raw form so nothing is taken away through cooking.  I feel like my skin has more elasticity, that I have more energy, less sugar cravings and feel  healthier in general.  Jimi has been enjoying them too and even Luke will sip from my glass.   I made pizza dough in it the other day in the dry container and it worked out great and we had homemade pizza.  I love that we are eating more food we make from scratch than processed food with who knows what in it.  There are so many recipes we want to try and I just love the machine.  It is a cinch to clean too, you just add a drop of dish soap and some warm water and crank that baby up.  It works in a jiffy and with a quick rinse you are all set for the next time.  Some of the concoctions I enjoy are kale, fresh cranberries, kiwi with skin, orange, fresh organic baby spinach, organic baby carrots, apple, banana, grapes, pomegranate and broccoli.  Some may say that sounds gross, but it isn’t.  It is surprisingly good and so healthy for you.   Well, off to whirl that baby up again!!!
