Baking Up #DisneyKids Preschool Playdate Party Treats-Easy Tutorial

We were chosen to show our #DisneySide in the hosting of a #DisneyKids Preschool Playdate Party. When the big box arrived, the kids were really excited to see what was inside! You can see our unboxing post and video HERE.

Next it was time to plan the snacks. We made Mickey Mouse Dipped OREO cookies and Devils Food Cupcakes with Marshmallow frosting that were decorated to look like Mickey.
#DisneyKidsMickey inspired cookies are a festive and fast to make. Just dip OREO Cookies in melted red candy wafers and then put white chocolate chips on them with the points cut off so they are a flat as possible. This is fast, easy and delicious.

Bake cupcakes and frost, top with 2 mini OREO cookies to look like ears and then decorate with colored sugar, decors or sprinkles for a festive touch.

How To Have Fun With Breakfast!

Do you love family breakfast time? A big weekend breakfast with pancakes, bacon, maple syrup and fresh squeezed orange juice sounds great doesn’t it? How about taking the fun factor up a notch with fun shaped pancakes. Think it sounds like a lot of work or is too hard? Well, you might be surprised to find out that it is not hard and it actually is a very fun process. It is so easy to make pancakes in fun shapes using the batter pen and fun silicone molds from Kitchen Khancepts.

The batter pen is easy to fill and easy to clean because both ends unscrew. Just fill it up with your favorite pancake batter and then squeeze it into the molds that you have placed in your pan or griddle. Baking Up #BigGameTreats With SNICKERS® & Skittles®!!!

The older I get, the more I can’t stand winter and in New York we are experiencing extreme, frigid temperatures.  The kind of dangerously low, temperatures causing our schools to close for!  We went into NYC this past Saturday and after going to the circus, I so badly wanted to walk with my husband and little ones on the streets of Manhattan, pick up some Italian pastries and show them the sites of the city that never sleeps.

However, literally a couple of blocks and we felt like we had frostbite so we ducked into a restaurant, had a late dinner and hailed a taxi to go back home.  Very disappointing.  It’s times like now I love when I see stores putting up spring displays and anything that makes January and the winter go faster.  Which is why when I went to Walmart to pick up some candy I needed for baking, I soaked in the spring merchandise on the shelves.

I am focusing on the next big event, we will be entertaining friends and family for the “Big Game” in a few weeks.  I love to bake and so I tried out some recipes this past weekend.  Who doesn’t love chocolate, caramel and peanuts?  Not any one I know, so I was excited to mix it up in the kitchen with SNICKERS®.  I first made some decadent, SNICKERS® Cupcakes.

Would you like to make these?  I knew you would.  First thing is to bake up some chocolate cupcakes.  I used just a boxed Devil’s Food cake mix and prepared and baked according to the package directions.

When the cupcakes are cool you make the filling by mixing milk, butter, soft caramels, chopped peanuts and marshmallow fluff.  You add milk, butter and caramels to a saucepan and melt on the stovetop over medium heat until melted stirring constantly.

Then add peanuts and marshmallow fluff to the melted confection and stir until everything is combined well.  Remove the mixture from the heat and allow to cool and thicken for approximately 30-35 minutes.

When you are ready to fill the cooled cupcakes, you cut out a hole in the middle of the top of the cupcake where the filling with go.  Then you can fill with a pastry bag and decorator tip all the cupcakes with the filling.

For the cupcake frosting I made a peanut Butter Buttercream by mixing butter, powdered sugar, vanilla, peanut butter and milk.  Put the frosting in a pastry bag and top all the cupcakes with the frosting.

Last I make a chocolate glaze by mixing confectioner’s sugar, cocoa powder and milk and drizzle the glaze over the cupcakes.  Top each cupcake with a half of a SNICKERS® Minis. Yum, these made the final cut and it was a unanimous decision that they will be found on our game day buffet.   If you want to try the list of ingredients is below.

Chocolate Cake Mix of Your Choice ( Prepare and Bake Cupcakes According To Package Directions)

 Cupcake Filling:

  • 3 Tbsp of Milk
  • 6 Tbsp of Butter
  • 8 Oz. Caramels
  • 1/4 Cup Marshmallow Fluff
  • 1/2 Cup Chopped Peanuts

Peanut Butter Icing

  • 1 Cup Butter
  • 4 Cups Confectioner’s Sugar
  • 1 Tsp Pure Vanilla Extract
  • 2/3 Cup Peanut Butter
  • 2-3 Tbsp Milk
Chocolate Glaze and Topping
  • 1/2 + 1/8 Cup Confectioner’s Sugar
  • 1 Tbsp. Cocoa
  • 1 1/2 Tbsp of Milk
  • 18 SNICKERS® Minis

SNICKERS® Stuffed Peanut Butter Cookies were the next treat on my baking agenda.  These are an easy peanut butter cookie that is stuffed with a SNICKERS® Mini.

First step is to make your cookie dough so cream butter, peanut butter, brown sugar and granulated sugar with your electric mixer.  Add egg, vanilla, milk, salt and baking soda and mix until completely combined.  Slowly add your flour a little at a time and mix until the dough comes together.  Chill your dough for at least 30 minutes.

Take your chilled dough and scoop out two tbsp. size  balls of dough, flatten slightly with the palm of your hand  and place a SNICKERS® Mini in the center of one of the flattened dough balls.

Top with the other slightly fattened dough balls and seal the edges and form into a ball.   Continue this process placing the cookies on a cookie sheet approximately 2″ apart.

Bake at  350 degrees F for 13-16 minutes or until they just begin to brown.

Cool 5 minutes on the cookie sheet and then remove them to a wire rack to cool completely.  Store the cookies in an airtight container or freeze them between layers of paper towels for up to 1 month.

So what did my family think?  Was this cookie a game day winner?  You betcha and it will have its special place on our big game day buffet extravaganza!  Want to try them?  The recipe is below.

SNICKERS® Stuffed Peanut Butter Cookies

  • 1/2 Cup (1 Stick) Salted Butter
  • 3/4 Cup Peanut Butter
  • 3/4 Cup Packed Brown Sugar
  • 1/4 Cup Granulated Sugar
  • 1 Large Egg
  • 1 Tsp Pure Vanilla Extract
  • 1 Tbsp Milk
  • 1/2 Tsp Baking Soda
  • 1-1/2 Cups Flour
  • SNICKERS® Minis (about 20-24)

Okay one more but we are going to appeal to those who are looking for something less chocolatey and more tangy.  For those guests I  tried a Skittles®  Drop Sugar Cookie.  Big thick, soft and chewy sugar cookies with a colorful mix of Skittles® are easy to make and oh so good.  The cookie even has a lemony, citrus flavor from the candy.  It was quite remarkable when I tasted that because I was surprised they would flavor the cookie itself but it was a delicious surprise.

I first made a drop sugar cookie batter.  Cream butter and sugar until light and fluffy then beat in one egg plus one egg yolk.  Add vanilla and mix well.  Then incorporate the flour, baking soda and cornstarch (first combine the dry ingredients ) and mix until well blended.

I used a cookie scoop to scoop out the dough onto a cookie sheet and then pressed in the Skittles® candies on top.  If you had a favorite team that was yellow and red, purple and yellow etc, you could use just those 2 colors to show your support for your team!

Bake the cookies at 350 degrees for about 12-14 minutes or until edges look set and just beginning to brown.  Remove and let cool on cookie sheet for a few minutes and then remove them to cool completely on a cooling rack.  This recipe makes about 24 large cookies.  See full list of recipe ingredients below.

  • 2 Cups Flour
  • 1 Tsp Baking Soda
  • 2 Tsp Cornstarch
  • 1/2 Cup (1 Stick) Salted Butter

  • 1-1/2 Tsp Pure Vanilla Extract
  • Skittles® Candy

Make These Easy Easter Cupcakes & Learn How To Bake Eggs For Coloring!!!

If you are looking for an easy, festive treat to make for Easter, you still have plenty of time to make these adorable cupcakes.

Just make your favorite flavor cupcakes and then get your frosting ready.  I use my own buttercream but you can use canned if you do not like to make your own.

Get a decorating bag ready and use  a Wilton Multi-Opening Decorating Tip 233.  Tint your frosting green with Wilton Gel Coloring or you can use liquid food coloring if you want.  Then just squeeze and pull up to create grass.

In the grass you can put a PEEPS bunny or chick, little M & M eggs,  Robin’s Eggs, Jelly Beans, or chocolate covered almonds.  You can also use some white buttercream and make little nests with an open crown tip and fill with candy eggs.  You can sprinkle the nests with sugar decor to make them sparkle or coconut flakes.  

Another great tip I got from a friend is to bake your eggs instead of boiling for coloring. You just put your eggs in a muffin tin and bake at 325 degrees for exactly 25 minutes. Do not over bake!  You will get great eggs with no cracks!  I tried it and love it!

Adorable Mickey Mouse Theme Cookies & Cupcakes!!!

Having a Disney party?  Maybe a Mickey Mouse theme?  If so you may want to try these easy to make adorable party cookies and cupcakes.  You will need Oreos, red chocolate melts and white chocolate chips for the cookies and cupcakes, frosting, Oreo Minis, and colorful nonpareils  and sprinkles for the cupcakes.

For the cookies follow along with the pictures for the simple steps:

Dip half the oreo in the melted chocolate, and place on a silicone lined baking tray or parchment paper to harden.

Bake your favorite flavor cupcakes and use your favorite white frosting.  I make my own buttercream but you could use canned frosting if you want.  Frost your cupcakes and then add colorful nonpareils or sprinkles and two Mini Oreos for ears.  Super easy and super cute for all the clubhouse guests.

Melissa & Doug Sunny Patch Seaside Sidekicks Sand Toys Review & Give-Away!!! {Give-Away Ended}

Boy, were my kids excited when we received a big box from Melissa and Doug the other day.  It was chock full of Melissa & Doug Sunny Patch Seaside Sidekicks sand toys. Today, while the little one and my husband were off on errands, Ethan and I decided to take everything for a test drive at the sand table.  We received four great sand play sets:

What fun, now you can make cupcakes at the beach or sandbox.  This great 12 piece set includes cupcake pan, hard plastic cupcake liners, cup cake topper molds, hinged cupcake mold, icing tool for decorating and a mesh bag to hold it all.   This set was so much fun, we made cupcake after cupcake, topping them with the different shaped molds, using the hinged mold to make free standing cupcakes and just having a blast.

2. Melissa & Doug Sunny Patch Seaside Sidekicks Sand Baking Set

This sand baking set includes 3 nesting shell shaped measuring cup scoops, crab mixing spoon, octopus whisk, mixing bowl and turtle sifting top.  Everything stores in the mixing bowl and the turtle sand sifter doubles as a secure top.  This set is loads of fun.  We scooped up sand with the shell shaped measuring cups added that to the mixing bowl, gave it a stir and a whisk and we were ready to fill the cupcake liners.  Ethan loved filling the spoon and measuring cups and releasing them in his hand.  He was so proud to have made little cakes he could hold.  We also talked about the different sizes of the measuring cups and which holds the most and other learning concepts.

This great set of molds provides hours of fun.  From a large turtle to a small seahorse you will have fun filling, smoothing and unmolding these molds.  Set includes turtle, fish, crab, starfish and little seahorse that all nest and store inside the turtle.

All Things Cupcake!!!

We all know the cupcake is hotter than it ever was.  With bakeries specializing in gourmet cupcakes, to gizmos and gadgets created to make these small cakes something much bigger than the kid’s class party staple.  We even have reality shows that showcase cupcake baking.   It seems like everyone is looking to reinvent the cupcake.  I have so many great cupcake tools and bling to showcase in the next few weeks.   These companies have also been so gracious as to sponsor give-aways so that my blog readers can have a chance to use these nifty gadgets.  Let’s just say, I will be doing a lot of cupcake baking in the next few weeks.   I am excited to show you some of the newest products to make your cupcakes stand out.   So what is your favorite thing in a cupcake?  Do you like to have pretty liners, tasty fillings, different flavors of cake, decadent frostings, or are you all about the decorating and presentation?  Whatever you fancy, I am sure I have a product that will interest you.   So keep this blog handy because we are going to have some fun with cupcakes!!!
