As the mother of five, I am all too familiar with picky eaters. My eight-year-old is the pickiest of all my kids. At least the others are  good about trying different things. I really like how easy it is to prepare the nuggets in the oven, microwave or my new favorite way in our air fryer. Then we just put out some crunchy veggies like celery and baby carrots with dipping sauces and we have dipping dinner. One of the dipping sauces we use is a kid-friendly Southwest Ranch Dip. The reason it is kid-friendly is that we leave the jalapeno peppers out of it. You can add them in if you like. The hot sauce still gives it a little kick.

This is such an easy dip to make and the kids can help all you do is whisk all the ingredients together and chill. However, if you are like us and you just can’t wait, you can serve it without chilling.

  3. Spiders-Take a pudding cup and 3 long sparkle craft sticks in any color you like. Next, just cut the craft sticks in half so you have 6 spider legs. Tape the legs to the back of the pudding cup and fold them around to the front. Add some google or sticker eyes.
  4. Bats-Cut out bat wings from black construction paper and tape to back of chocolate pudding cups. Add google or sticker eyes.
  5. Create Your Own-Cover Go-Paks! with sparkly paper and use it as a blank canvas to create monsters, funny faces and more. Decorate pudding cups with stickers to create funny faces.

There are endless possibilities. Kids will love them and love helping you make them!

Then let them mix up a fun snack!  Some great combinations we found were big hits are the TEDDY GRAHAMS, Chocolate Pudding and  Mini Marshmallows topped with Reddi-Wip and some additional Teddy Grahams for a new take on the S’more. If you take Mini NILLA wafers Go-Pak! and mix with vanilla pudding and fresh sliced banana then top with Reddi-Wip and banana and more Mini Nilla wafers you have a banana cream pudding snack cup. Let kids pick and choose and mix up their own creations. They will love being able to create their own recipe.

School starts for our kids next week. This week we are still enjoying the end of Summer. We even have a road trip planned tomorrow to 6 Flags! Whenever we take a road trip, we are sure to pack snacks for our journey. It saves us time stopping every time hunger hits and cuts down on crabby kids. You will also want to add some crackers and those can be whatever your kids like. I used saltines and graham crackers.

Five or Six Large Potatoes

1.5 Tbs of Extra Virgin Olive Oil

Sea Salt/Pepper To Taste

This is such and easy recipe, just peel the potatoes and cut into thick homestyle fries. Put the fries in the basket and coat with extra virgin olive oil. Cook in the AirFryer for 10 minutes. Take out basket shake and return to fryer to cook 10 more minutes.  Remove fries to plate and season to taste with sea salt and pepper.

Almond Flour Chocolate Chip Cookies

Recently I tried to adjust my favorite coconut oil, chocolate chip cookie recipe and substitute almond flour for white flour.  The problem was the cookies spread out way too much and were like crepes.  I added more almond flour and the second batch was better but still way too thin.  They tasted good though, so I know if I keep experimenting, I will come up with the solution.

In my search, I did find it would be best to chill the dough and I will try that next time.  In the meantime, I tried another recipe for Almond Flour Chocolate Chip Cookies and this one used baking soda instead of baking powder like mine and I decided to try it and chill the dough.  The cookies did not spread out but they did not take like a chocolate chip cookie like my first recipe.  The taste and texture is more like a macaroon.  They are very good, but I cannot believe there is such a huge difference in taste and texture.  This recipe almost tastes like flaked coconut was added.  Like I said, it is very good, just not what I would call a chocolate chip cookie.  I would refer to it as a chocolate chip macaroon cookie, lol.  Anyway, lets take a look at how we make these  and I will update with the other recipe and post pics of the first go round on that as well.

For my almond flour, I used the Morning Pep brand that is available on Amazon.  It is made from 100% all-natural Certified Gluten-Free by GFCO blanched almonds. The flour is ground very fine so it gives baked goods and sweets a rich flavor and moist texture, contains no preservatives or additives.  Morning Pep Almond Meal Flour is a great source of dietary fiber, Vitamin E, protein, iron, magnesium and calcium. Morning Pep Almond Flour is considered pasteurized by the USDA and The Almond Board of California.

Almond Meal Flour Chocolate Chip Cookies (More Like A Macaroon In Consistency)

Ingredients:

    • 1/2 cup butter, softened
    • 1/4 cup coconut oil, softened
    • 3/4 Cup Brown Sugar
    • 2 Teaspoons Pure Vanilla Extract
    • 2 Large Eggs
    • 1/2 Teaspoon of Baking Soda
    • 1/2 Teaspoon Fine Grind Sea Salt
    • 3-3-3/4 Cups of Almond Flour (dough was too soft with 3 cups so I added about 3/4 cup more)
    • 1-1/4 Cups of Semi-Sweet Chocolate Chips
    • 2/3 Cup Toasted Walnuts (Optional)

Instructions:

Preheat oven to 350 degrees F. Use a silicone baking mat or line your cookie sheet with parchment paper.

In your mixer bowl  cream the butter, extra virgin coconut oil and brown sugar. Next, add the vanilla and eggs and mix until blended.

Add baking soda and sea salt.  Add the almond flour one cup at time, beat well after each addition. I felt the dough was too soft after adding 3 cups of flour and gradually added more, I would say about 3/4 cup more.  Dough was still soft  but not as soft as before.

Add the chocolate chips and mix until incorporated in the dough, if you are adding the nuts, add them now and mix.

Chill the dough for at least an hour. Scoop with a small cookie scoop onto the lined cookie sheet and bake immediately for 11-12 minutes or until golden brown around the edges.  Let cook and remove to baking rack to cool thoroughly.  Yield about 3 dozen with the additional flour.

It’s nearly the end of the school year.  In New York we are finally experiencing warmer temperatures, even though we had a few days recently with frost warnings.  The unofficial start of summer is in full swing and there is no better time to kick back and share something refreshing with someone special.

 

I was in Sam’s Club recently and they were holding a demo where they were giving customers a full can of Coca Cola, mine said Superstar!

Past the demo set up on the shelves were 32 and 35 can packs of Coca Cola. I picked up a 35 can pack at a super low price.  These large packs are perfect for all the upcoming celebrations that are happening in the next few weeks like Father’s Day, Graduation Parties, Family BBQs and more! I love that the cans have names of people you can share them with like Bestie, Grillmaster, Friend, Better Half, Dreamer, Bro, Sis, Soulmate etc.

Looking at the names on the cans gave me some great ideas of how I could share them with special people in my life. I thought a great way to surprise my hubby with something special would be to make Coca Cola floats.  Coke and ice cream floats are so easy to make. We used vanilla and chocolate ice cream to make ours.

My husband said the floats with the vanilla ice cream were good but the chocolate ice cream and Coca Cola floats were beyond delicious! I made a printable that went along with the can and the float idea. Super simple it said, “To My Better Half”, just like the can and then had a picture of a boat and said, “You Float My Boat.”  He thought it was really cute and loved the whole idea, especially the refreshing ice cream Coke floats.

Another idea I had was to share the refreshing beverage with a good friend and one of my children’s teachers. Pairing them with a Coca Cola glass and custom printed gift tag I made, I put them in a red gift bag and a theme gift was in the bag! It was a simple yet special gift to say thank you for all they’ve done.

Glee Gum, Make Your Own Candy Kit, Review & Giveaway!!! #HolidayGiftGuide

In the past you may have read about how we made our own milk chocolate with kits from Glee Gum.  We decided to mix it up a bit this year and try a different kit.  We opted for the Make Your Own Chewing Gum Kit.  So recently we set out to test out our gum making skills.  The kit comes with all you need, even a disposable tray to melt the chicle gum base which resembles small beads or popcorn kernels.  The reason for the disposable tray is because the chicle gum base when melted is so incredibly sticky.

We used the microwave to melt the chicle gum base and when it was melted we added the corn syrup and tried to stir.

I say tried to because the stickiness really makes you add some serious muscle to the mix.  after that you roll it in the confectioner’s sugar and then knead in one of the flavor packets.  After that you roll it and cut it into pieces.  The best part is last and you can taste your creation.

Grilled Peanut Butter, Banana & Honey Waffle Breakfast Sandwiches With Aunt Jemima Frozen Waffles!!! #4MoreWaffles

I always think that the plan of getting up 20 minutes earlier in the morning will make getting the kids out the door less hurried and subsequently less stressful.  It makes perfect sense at night and I totally agree and would offer the advice to anyone.  However, when that alarm goes off and I am feeling particularly sleepy, knowing that I have the extra minutes can make me hit the snooze alarm a few times.  Now at the time, I think those extra minutes are so worth it, but when we are scurrying about trying to get everyone dressed and out to the bus stop in time and someone can’t find something they need, it hardly seems worth it.

I want my kids to not be stressed in the morning, so we make sure that we have everything ready to go the night before and that helps.  You know what else helps?  Having breakfast choices that are fast and easy.  That is why I keep Aunt Jemima Frozen Waffles in our freezer.  The resealable packs now come with  14 waffles instead of 10! My kids love waffles and these can be heated in the toaster which makes breakfast on the go a breeze.  We usually just toast and serve with syrup,  fruit or fruit and yogurt on the side on school days.  However on weekends, we can go all out and cook sausage, eggs with cheese, Canadian bacon and of course have fruit and yogurt too.  A really special recipe for Grilled Peanut Butter, Banana & Honey Waffle Sandwiches is below!

My kids love a waffle sandwich that is made with 2 Aunt Jemima Waffles fresh from the toaster and with scrambled eggs with cheddar cheese, topped with Canadian bacon or pork roll and topped with another waffle.  They also like the waffles with syrup and a side of sausage.  So many great ways to eat them, you can use your imagination and indulge your taste buds.  As for me I’m glad I have something in the freezer that makes breakfast fast and satisfying for my kids.  Aunt Jemima helps me have one less thing to worry about on busy mornings and gives us something special to look forward to on weekend mornings.

Recipe Idea:

I want to share another way to serve Aunt Jemima Waffles that is super yummy!  What you need is 1/2  banana cut in slices, about 1.5 Tbsp of Peanut butter, 1 Tsp of honey and 2 Aunt Jemima Waffles of your choice.

Toast the waffles and then spread the peanut butter on both waffles, top one side with the honey and the other side with sliced bananas.

Put it together and grill it lightly in a pan with a little butter.  After grilling both sides remove, cut and enjoy!

Success® Whole-Grain Boil-In-Bag Brown Rice Is a Pantry Staple For Me!!! #SUCCESSRICE

You know what’s one of my go to foods when I want a quick and easy side dish or to make to eat for lunch or a snack? It’s Success® Whole-Grain Brown Rice and Salsa.  I have been eating that for the last several years so I was absolutely stoked to be chosen to write a sponsored post for Success® Boil-In-Bag Rice.  I absolutely love it the brown rice and mild chunky salsa combination.  I have no idea what ever led me to mix the two, but from the first time I did, it was love at first bite.

If you’ve never tried it, you should! Success® Whole-Grain Brown Rice is 100% whole grain and gluten-free. The rice has a great chewy texture and nut-like flavor that are a nice departure from traditional rice products on the shelves.  The cooked brown rice can be used in a variety of recipes from salads, soups, main entrees to desserts just like white rice.  Success® Whole-Grain Brown Rice is available in two sizes (14 oz. and 32 oz.) to accommodate different household sizes.

I tried a recipe for the first time with Success® Whole-Grain Brown Rice.  I improvised on one of the recipes I found online at the Success® Rice website. and made a fried brown vegetable rice.  It was super easy.  I just prepared 2 bags of Success® Whole-Grain Brown Rice according to the package directions.

I put the rice in a bowl and mixed it with peas and carrots (you can use cooked fresh, canned or frozen) and green beans. Then I  heated up some oil in pan to cook 4 beaten eggs for about 40 seconds, began to break up the eggs  into small pieces while they finished cooking.

When the eggs were cooked I added the rice and veggies and cooked until heated through adding a few tablespoons of low sodium soy sauce. An easy way to a healthy side that tastes great.
